Ingredients:
- 1 1/2 cups warm water (110°F/45°C)
- 2 1/4 teaspoons instant yeast (1 packet)
- 1 tablespoon granulated sugar
- 1 teaspoon salt
- 4 cups all-purpose flour
- 4 tablespoons unsalted butter, melted
- 1/4 cup baking soda
- 8 cups water
- Coarse salt, for topping
- Optional: melted butter for brushing
Directions:
- Activate Yeast
- In a large bowl, combine warm water, yeast, and sugar. Let sit for 5 minutes until foamy.
- Form Dough
- Add salt, flour, and melted butter to the yeast mixture. Mix until a dough forms. Knead on a floured surface for about 5 minutes until smooth and elastic.
- Let Dough Rise
- Place the dough in a greased bowl, cover with a towel, and let it rise in a warm place for 1 hour or until doubled in size.
- Prepare Baking Soda Bath
- Preheat the oven to 425°F (220°C) and line two baking sheets with parchment paper.
- In a large pot, bring 8 cups of water to a boil. Add the baking soda, stirring until dissolved.
- Shape and Boil Pretzel Bites
- Punch down the dough and divide it into 6 pieces. Roll each piece into a rope about 12 inches long, then cut into 1-inch pieces.
- Working in batches, drop the pieces into the baking soda water for 20-30 seconds. Remove with a slotted spoon and place on the prepared baking sheets.
- Bake the Pretzel Bites
- Brush the bites with melted butter and sprinkle with coarse salt. Bake for 12-15 minutes, or until golden brown.
- Serve and Enjoy
- Optional: Brush with more melted butter after baking for extra flavor. Serve warm with your favorite dips, like cheese sauce or mustard.
