Ingredients:

2 large zucchinis

3 tablespoons olive oil

3 garlic cloves, minced

1 cup shredded mozzarella cheese

1/4 cup grated Parmesan cheese

1 teaspoon Italian seasoning

Salt and pepper to taste

Fresh parsley (optional, for garnish)

Instructions:

  1. Preheat Oven: Set your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Prepare Zucchini: Cut zucchinis lengthwise into thick slices (steaks). Lightly score the surface with a knife for better seasoning absorption.
  3. Season Zucchini: In a small bowl, mix olive oil, minced garlic, Italian seasoning, salt, and pepper. Brush the mixture generously over each zucchini slice.
  4. Bake Initial Stage: Arrange the zucchini on the prepared baking sheet. Bake for 15 minutes or until they begin to soften.
  5. Add Cheese: Remove the zucchini from the oven. Sprinkle mozzarella and Parmesan cheeses evenly over the top of each slice.
  6. Final Bake: Return the zucchini to the oven and bake for another 8-10 minutes, or until the cheese is melted and golden.
