Tender, juicy meatballs simmered in a rich and flavorful onion gravy. This easy slow cooker recipe is great for weeknight dinners or family gatherings—serve over mashed potatoes, rice, or egg noodles!
Ingredients
- For the meatballs:
- 1 ½ pounds ground beef
- ½ cup breadcrumbs
- 1 large egg
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 tablespoon Worcestershire sauce
- Salt & pepper to taste
- For the gravy:
- 1 packet dry onion soup mix (like Lipton)
- 1 can (10.5 oz) cream of mushroom soup
- ¾ cup beef broth
- 1 tablespoon Worcestershire sauce
- 1 teaspoon dried parsley (optional)
Directions
- Make the meatballs:
In a large bowl, combine ground beef, breadcrumbs, egg, garlic powder, onion powder, Worcestershire sauce, salt, and pepper. Mix until just combined—don’t overmix. Form into 1 ½-inch meatballs. - Brown the meatballs (optional):
For extra flavor and structure, quickly brown meatballs in a skillet over medium-high heat (about 1-2 minutes per side). This step is optional but recommended. - Prepare the sauce:
In a separate bowl, whisk together the onion soup mix, cream of mushroom soup, beef broth, and Worcestershire sauce. - Slow cook:
Place meatballs in the slow cooker and pour the sauce over them. Cover and cook on low for 6–7 hours or high for 3–4 hours, until meatballs are tender and cooked through. - Serve:
Garnish with parsley if desired and serve hot over mashed potatoes, rice, or pasta.
