Tender, juicy beef strips and sweet bell peppers simmered low and slow in a rich garlic-soy tomato sauce. A weeknight winner with minimal prep and maximum flavor!
Ingredients
- 2 lbs beef sirloin or round steak, cut into thin strips
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 yellow onion, sliced
- 3 cloves garlic, minced
- 1 (14.5 oz) can diced tomatoes with juice
- 1/4 cup low-sodium soy sauce
- 2 tbsp cornstarch
- 2 tbsp water
- 1 tbsp brown sugar (optional for a hint of sweetness)
- 1 tsp ground ginger (optional)
- Salt and pepper to taste
- Cooked rice or noodles for serving
- Green onions or sesame seeds for garnish (optional)
Directions
- Prepare the beef:
Season the beef strips with salt and pepper and place them in the bottom of your slow cooker. - Add the veggies:
Add bell peppers, onions, and minced garlic on top of the beef. - Make the sauce:
In a bowl, combine diced tomatoes (with juice), soy sauce, brown sugar, and ginger. Pour over everything in the slow cooker. - Cook:
Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours, until beef is tender. - Thicken the sauce:
Mix cornstarch with water to make a slurry. Stir it into the crock pot during the last 30 minutes of cooking to thicken the sauce. - Serve:
Spoon over rice or noodles and garnish with green onions or sesame seeds if desired.
