Pepper Steak in a Crock Pot

Tender, juicy beef strips and sweet bell peppers simmered low and slow in a rich garlic-soy tomato sauce. A weeknight winner with minimal prep and maximum flavor!


Ingredients

  • 2 lbs beef sirloin or round steak, cut into thin strips
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 yellow onion, sliced
  • 3 cloves garlic, minced
  • 1 (14.5 oz) can diced tomatoes with juice
  • 1/4 cup low-sodium soy sauce
  • 2 tbsp cornstarch
  • 2 tbsp water
  • 1 tbsp brown sugar (optional for a hint of sweetness)
  • 1 tsp ground ginger (optional)
  • Salt and pepper to taste
  • Cooked rice or noodles for serving
  • Green onions or sesame seeds for garnish (optional)

Directions

  1. Prepare the beef:
    Season the beef strips with salt and pepper and place them in the bottom of your slow cooker.
  2. Add the veggies:
    Add bell peppers, onions, and minced garlic on top of the beef.
  3. Make the sauce:
    In a bowl, combine diced tomatoes (with juice), soy sauce, brown sugar, and ginger. Pour over everything in the slow cooker.
  4. Cook:
    Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours, until beef is tender.
  5. Thicken the sauce:
    Mix cornstarch with water to make a slurry. Stir it into the crock pot during the last 30 minutes of cooking to thicken the sauce.
  6. Serve:
    Spoon over rice or noodles and garnish with green onions or sesame seeds if desired.
