Ingredients
- 1 (8 oz) package cream cheese, softened
- 1 (3.4 oz) package instant cheesecake pudding mix
- 1/2 cup powdered sugar
- 1 cup vanilla yogurt
- 1 cup Cool Whip or whipped topping
- Juice of 1 lime (about 2 tbsp)
Fruit (feel free to adjust):
- 1 cup pineapple chunks (fresh or drained canned)
- 1 cup mango chunks
- 1 cup sliced strawberries
- 1 cup kiwi, peeled and sliced
- 1 banana, sliced (add just before serving)
- 1/2 cup shredded sweetened coconut (optional)
- 1/4 cup chopped pecans or macadamia nuts (optional)
Directions
- Make the cheesecake base:
In a large bowl, beat cream cheese until smooth. Add powdered sugar and mix until creamy. - Mix in pudding:
Add the cheesecake pudding mix, yogurt, lime juice, and mix until fully combined. - Fold in whipped topping:
Gently fold in the Cool Whip until smooth and fluffy. - Add the fruit:
Carefully fold in all prepared fruit except the banana. Add coconut and nuts if using. - Chill:
Refrigerate for at least 1 hour to let flavors combine. Add banana slices just before serving to prevent browning.
