Ingredients

  • 1 lb ground beef
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 4 cups potatoes, thinly sliced (Yukon Gold or Russet)
  • 1 (10.5 oz) can cream of mushroom soup
  • 1/2 cup sour cream
  • 1/2 cup milk
  • 2 cups shredded cheddar cheese (divided)
  • 1/2 tsp paprika
  • Salt and pepper to taste
  • Optional: chopped parsley or green onions for garnish

Directions

  1. Preheat oven to 375°F (190°C). Grease a 9×13-inch baking dish.
  2. Brown the beef:
In a large skillet, cook ground beef over medium heat with diced onion and garlic. Season with salt, pepper, and paprika. Cook until beef is browned and onions are tender. Drain excess fat.

In a bowl, mix cream of mushroom soup, sour cream, and milk until smooth. Stir in 1 cup of shredded cheddar cheese.
  4. Assemble the casserole:
Layer half of the sliced potatoes in the bottom of the dish. Top with half of the beef mixture, then spread half of the creamy cheese sauce over it. Repeat the layers.
  5. Top and bake:
Cover with foil and bake for 60 minutes. Remove foil, sprinkle remaining 1 cup cheddar cheese on top, and bake uncovered for another 15–20 minutes, until potatoes are tender and cheese is melted and bubbly.
