Crispy Oven-Baked Chicken Taquitos

Golden, crispy on the outside and filled with creamy seasoned chicken on the inside — these oven-baked taquitos are perfect for game day, dinner, or a tasty snack!


Ingredients

  • 2 cups cooked shredded chicken (rotisserie works great!)
  • 4 oz cream cheese, softened
  • 1/2 cup shredded cheddar or pepper jack cheese
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp chili powder
  • 1/4 tsp cumin
  • Salt and pepper to taste
  • 10 small flour or corn tortillas
  • Olive oil or cooking spray

Directions

  1. Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper or lightly grease it.
  2. Make the filling:
    In a large bowl, mix the shredded chicken, cream cheese, shredded cheese, and spices until well combined.
  3. Warm the tortillas:
    Microwave tortillas for about 20 seconds wrapped in a damp paper towel to make them pliable.
  4. Assemble taquitos:
    Spoon 2–3 tablespoons of the chicken mixture onto one side of each tortilla. Roll tightly and place seam-side down on the prepared baking sheet.
  5. Brush with oil:
    Lightly brush the tops with olive oil or spray with cooking spray for maximum crispiness.
  6. Bake:
    Bake for 15–20 minutes or until golden brown and crispy.
  7. Serve:
    Let cool slightly and serve with salsa, sour cream, or guacamole.
