Ingredients
- 2 cups cooked shredded chicken (rotisserie works great!)
- 4 oz cream cheese, softened
- 1/2 cup shredded cheddar or pepper jack cheese
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1/2 tsp chili powder
- 1/4 tsp cumin
- Salt and pepper to taste
- 10 small flour or corn tortillas
- Olive oil or cooking spray
Directions
- Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper or lightly grease it.
- Make the filling:
In a large bowl, mix the shredded chicken, cream cheese, shredded cheese, and spices until well combined. - Warm the tortillas:
Microwave tortillas for about 20 seconds wrapped in a damp paper towel to make them pliable. - Assemble taquitos:
Spoon 2–3 tablespoons of the chicken mixture onto one side of each tortilla. Roll tightly and place seam-side down on the prepared baking sheet. - Brush with oil:
Lightly brush the tops with olive oil or spray with cooking spray for maximum crispiness. - Bake:
Bake for 15–20 minutes or until golden brown and crispy. - Serve:
Let cool slightly and serve with salsa, sour cream, or guacamole.
