No Bake Homemade Crunch Bars

These chocolatey bars are rich, crispy, and melt-in-your-mouth delicious! Made with just a few simple ingredients, they’re the perfect no-fuss dessert or snack for any time of day.


Ingredients

  • 2 cups semisweet or milk chocolate chips
  • 1/2 cup creamy peanut butter (optional but adds richness)
  • 2 1/2 cups crispy rice cereal (like Rice Krispies)
  • 1 tsp vanilla extract
  • Pinch of salt

Directions

  1. Melt the chocolate:
    In a microwave-safe bowl, combine the chocolate chips and peanut butter. Microwave in 30-second intervals, stirring after each, until smooth and fully melted (about 1–2 minutes total).
  2. Add vanilla & salt:
    Stir in the vanilla extract and a pinch of salt for extra flavor depth.
  3. Mix in cereal:
    Gently fold the crispy rice cereal into the chocolate mixture until evenly coated.
  4. Transfer to pan:
    Line an 8×8-inch baking dish with parchment paper. Pour the mixture in and press down gently with a spatula to flatten evenly.
  5. Chill to set:
    Place in the refrigerator for at least 1 hour or until firm.
  6. Cut & serve:
    Once set, lift out using the parchment paper and cut into bars or squares. Enjoy!
