Marshmallow Surprise Fruity Pebble Cookies

Soft, chewy cookies bursting with Fruity Pebble cereal and a gooey marshmallow center. These bright, fun treats are perfect for kids—and the kid in you!


Ingredients:

  • 1/2 cup (1 stick) unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar, packed
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 1/4 cups all-purpose flour
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1 1/2 cups Fruity Pebbles cereal
  • 10–12 large marshmallows (cut in half if needed)

Directions:

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. Cream the butter and sugars together in a large bowl until light and fluffy. Beat in the egg and vanilla extract until smooth.
  3. Add the dry ingredients: Mix in flour, baking soda, and salt until just combined.
  4. Fold in Fruity Pebbles gently until evenly distributed.
  5. Scoop and stuff: Take about 2 tablespoons of dough, flatten it, place a marshmallow in the center, then cover with another small piece of dough. Seal the edges and roll into a ball.
  6. Bake for 10–12 minutes until edges are lightly golden. The centers will look slightly underdone—that’s perfect for a gooey inside!
  7. Cool for 5 minutes on the sheet, then transfer to a wire rack.
