Ingredients:
- 1/2 cup (1 stick) unsalted butter, softened
- 1/2 cup granulated sugar
- 1/4 cup brown sugar, packed
- 1 large egg
- 1 tsp vanilla extract
- 1 1/4 cups all-purpose flour
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1 1/2 cups Fruity Pebbles cereal
- 10–12 large marshmallows (cut in half if needed)
Directions:
- Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
- Cream the butter and sugars together in a large bowl until light and fluffy. Beat in the egg and vanilla extract until smooth.
- Add the dry ingredients: Mix in flour, baking soda, and salt until just combined.
- Fold in Fruity Pebbles gently until evenly distributed.
- Scoop and stuff: Take about 2 tablespoons of dough, flatten it, place a marshmallow in the center, then cover with another small piece of dough. Seal the edges and roll into a ball.
- Bake for 10–12 minutes until edges are lightly golden. The centers will look slightly underdone—that’s perfect for a gooey inside!
- Cool for 5 minutes on the sheet, then transfer to a wire rack.
