Peaches & Cream Loaf

A moist and tender loaf filled with sweet peaches and a creamy swirl, making every bite a heavenly experience. Perfect for summer or any time you crave a fruity dessert.


Ingredients:

For the Loaf:

  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup sour cream (or Greek yogurt)
  • 1 cup peaches, diced (fresh or canned, drained)

For the Cream Cheese Swirl:

  • 4 oz cream cheese, softened
  • 1/4 cup powdered sugar
  • 1 tsp vanilla extract

Directions:

  1. Preheat the oven:
    Preheat your oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan or line it with parchment paper.
  2. Make the loaf batter:
    In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside. In a large bowl, cream together the softened butter and granulated sugar until light and fluffy, about 2–3 minutes. Add the eggs, one at a time, beating well after each addition. Stir in the vanilla extract and sour cream. Gradually add the dry ingredients to the wet ingredients, mixing just until combined. Gently fold in the diced peaches.
  3. Make the cream cheese swirl:
    In a small bowl, beat the cream cheese, powdered sugar, and vanilla extract together until smooth.
  4. Assemble the loaf:
    Pour half of the batter into the prepared loaf pan. Drop spoonfuls of the cream cheese mixture on top, then swirl it into the batter with a knife or skewer. Add the remaining batter on top and swirl the cream cheese mixture again to create a marble effect.
  5. Bake:
    Bake for 55–65 minutes or until a toothpick inserted into the center comes out clean. If the top starts to brown too quickly, cover with foil and continue baking.
  6. Cool and serve:
    Let the loaf cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
