Ingredients:
- 1 lb ground beef
- 1 packet taco seasoning
- 1 can (10.5 oz) cream of chicken soup
- 1 can (10 oz) Rotel (diced tomatoes with green chilies), drained
- 1 cup sour cream
- 2 cups shredded cheddar cheese
- 1 bag (9.75 oz) Nacho Cheese Doritos, slightly crushed
- Optional: sliced green onions, chopped tomatoes, jalapeños for garnish
Directions:
- Preheat oven:
Preheat to 350°F (175°C). Grease a 9×13-inch baking dish. - Cook the beef:
In a skillet over medium heat, cook ground beef until no longer pink. Drain excess fat. Add taco seasoning and a splash of water; stir and cook for 2 more minutes. - Mix the filling:
In a large bowl, combine cooked beef, cream of chicken soup, Rotel, and sour cream. Stir in 1 cup of the shredded cheese. - Layer the casserole:
Spread half of the crushed Doritos in the bottom of the prepared dish. Top with the beef mixture, spreading evenly. Sprinkle remaining Doritos on top, followed by the remaining 1 cup of cheese. - Bake:
