Cheesy Dorito Delight Casserole

A comforting, cheesy casserole layered with seasoned ground beef, creamy sauce, and crunchy Doritos—baked to perfection for the ultimate weeknight dinner!


Ingredients:

  • 1 lb ground beef
  • 1 packet taco seasoning
  • 1 can (10.5 oz) cream of chicken soup
  • 1 can (10 oz) Rotel (diced tomatoes with green chilies), drained
  • 1 cup sour cream
  • 2 cups shredded cheddar cheese
  • 1 bag (9.75 oz) Nacho Cheese Doritos, slightly crushed
  • Optional: sliced green onions, chopped tomatoes, jalapeños for garnish

Directions:

  1. Preheat oven:
    Preheat to 350°F (175°C). Grease a 9×13-inch baking dish.
  2. Cook the beef:
    In a skillet over medium heat, cook ground beef until no longer pink. Drain excess fat. Add taco seasoning and a splash of water; stir and cook for 2 more minutes.
  3. Mix the filling:
    In a large bowl, combine cooked beef, cream of chicken soup, Rotel, and sour cream. Stir in 1 cup of the shredded cheese.
  4. Layer the casserole:
    Spread half of the crushed Doritos in the bottom of the prepared dish. Top with the beef mixture, spreading evenly. Sprinkle remaining Doritos on top, followed by the remaining 1 cup of cheese.
  5. Bake:
    Bake uncovered for 25–30 minutes, until bubbly and cheese is melted.
  6. Garnish and serve:
    Top with green onions, tomatoes, or jalapeños if desired. Serve warm!
