Ingredients:
- 20 jumbo pasta shells
- 1 lb ground beef or ground turkey
- 1 packet taco seasoning
- 1/2 cup water
- 1 cup salsa
- 1 cup shredded cheddar cheese
- 1 cup shredded Mexican blend cheese
- 4 oz cream cheese, softened
- 1/4 cup chopped green onions (optional)
- Sour cream, diced tomatoes, cilantro, or jalapeños for topping (optional)
Directions:
- Cook the shells:
Boil jumbo pasta shells according to package directions until al dente. Drain and set aside. - Prepare the filling:
In a skillet over medium heat, cook ground beef until browned. Drain any excess fat.
Stir in taco seasoning and water, simmer for 3–4 minutes.
Add cream cheese and half of the shredded cheddar; stir until melted and well combined. - Stuff the shells:
Preheat oven to 350°F (175°C).
Spread salsa in the bottom of a 9×13-inch baking dish.
Fill each shell with the taco meat mixture and place in the dish. - Top and bake:
Sprinkle the remaining cheddar and Mexican blend cheese over the shells.
Cover with foil and bake for 20 minutes. Remove foil and bake another 10 minutes until cheese is bubbly. - Serve:
Garnish with green onions, sour cream, tomatoes, jalapeños, or cilantro if desired.
