Pineapple Quick Bread

A sweet and moist bread with a tropical twist, made with fresh pineapple and a hint of vanilla—perfect for any time of the day!


Ingredients:

  • 2 cups all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup crushed pineapple, drained
  • 1/4 cup milk

Directions:

  1. Preheat oven:
    Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan or line it with parchment paper.
  2. Mix dry ingredients:
    In a medium bowl, whisk together the flour, baking powder, baking soda, salt, and cinnamon. Set aside.
  3. Cream butter and sugar:
    In a large bowl, cream together the softened butter and granulated sugar until light and fluffy, about 3 minutes.
  4. Add eggs and vanilla:
    Beat in the eggs, one at a time, followed by the vanilla extract.
  5. Add dry ingredients and pineapple:
    Gradually add the dry ingredients to the butter mixture, alternating with the milk. Mix until just combined. Stir in the crushed pineapple until evenly distributed.
  6. Pour into pan:
    Pour the batter into the prepared loaf pan and spread it evenly.
  7. Bake:
    Bake for 60-70 minutes, or until a toothpick inserted into the center comes out clean. If the top begins to brown too quickly, loosely cover the bread with foil and continue baking.
  8. Cool and serve:
    Allow the bread to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
