1. Cream Cheese Banana Bread
Ingredients
For the batter:
1 ½ cups all-purpose flour
1 tsp baking soda
½ tsp salt
½ cup unsalted butter, softened
¾ cup sugar
2 large eggs
1 cup mashed ripe bananas
¼ cup sour cream
1 tsp vanilla extract
For the cream cheese filling:
8 oz (225 g) cream cheese, softened
¼ cup (50 g) sugar
1 large egg
2 tbsp all-purpose flour
Instructions
Prepare the pan & oven. Preheat oven to 350°F (175°C). Grease and line a 9×5-inch loaf pan with parchment paper.
Mix dry ingredients. In a medium bowl, whisk together flour, baking soda, and salt. Set aside.
Make banana batter. In a large bowl, cream butter and sugar until light and fluffy. Beat in eggs one at a time. Mix in mashed bananas, sour cream, and vanilla. Stir in dry ingredients until just combined.
Make cream cheese filling. In another bowl, beat cream cheese, sugar, egg, and flour until smooth and creamy.
Assemble. Pour half of the banana batter into the loaf pan. Spread cream cheese mixture evenly on top. Pour the remaining banana batter over the cream cheese layer and smooth the top.
Bake. Bake 55–65 minutes, or until a toothpick inserted in the center (through banana batter, not cream cheese) comes out clean. If the top browns too quickly, cover loosely with foil.
Cool & serve. Let bread cool in the pan 15 minutes, then transfer to a wire rack to cool completely before slicing.
2. Double Chocolate Banana Bread
Ingredients
1 cup all-purpose flour
½ cup unsweetened cocoa powder
1 tsp baking soda
½ tsp baking powder
½ tsp salt
½ cup unsalted butter, melted (or neutral oil)
1 cup brown sugar (or white sugar)
2 large eggs
1 tsp vanilla extract
1 cup mashed very ripe bananas (about 2–3 bananas)
½ cup sour cream or Greek yogurt
1 1/2 cup semisweet or dark chocolate chips
Instructions
Preheat oven & prepare pan. Heat oven to 350°F (175°C). Grease and line a 9×5-inch loaf pan with parchment paper.
Mix dry ingredients. In a medium bowl, whisk together flour, cocoa powder, baking soda, baking powder, and salt.
Mix wet ingredients. In a large bowl, whisk melted butter and sugar until smooth. Add eggs and vanilla, mixing well. Stir in mashed bananas and sour cream.
Combine. Gently fold dry ingredients into wet until just combined. Do not overmix. Stir in most of the chocolate chips, reserving a handful for the top.
Bake. Pour batter into prepared pan, smooth the top, and sprinkle with remaining chocolate chips. Bake 55–65 minutes, or until a toothpick inserted in the center comes out with only a few moist crumbs.
Cool & serve. Allow to cool in pan for 15 minutes, then transfer to a wire rack to cool completely. Slice and enjoy!
3. Carrot Banana Bread with Cream Cheese Glaze
Ingredients
Dry Mix:
1 ½ cups all-purpose flour
1 tsp baking soda
½ tsp baking powder
½ tsp salt
1 tsp cinnamon
¼ tsp nutmeg
Wet Mix:
½ cup vegetable oil (or melted butter)
½ cup brown sugar
¼ cup granulated sugar
2 large eggs
2 ripe bananas, mashed
1 cup finely grated carrots
1 tsp vanilla extract
Instructions
Preheat oven to 350°F (175°C). Grease or line a 9×5-inch loaf pan.
Whisk dry ingredients: In a bowl, combine flour, baking soda, baking powder, salt, cinnamon, and nutmeg.
Mix wet ingredients: In another bowl, whisk oil, sugars, eggs, mashed bananas, vanilla, and grated carrots.
Combine: Add dry ingredients to wet and stir gently until just combined. Fold in nuts if using.
Bake: Pour into prepared pan and bake for 50–60 minutes, or until a toothpick inserted in the center comes out clean.
Cool completely before glazing.
