Steak Quesadillas 

Steak quesadillas are a delicious and satisfying dish that combines tender, seasoned steak with melted cheese in a warm tortilla. Here’s a simple recipe to make steak quesadillas at home:

Ingredients:

For the Steak:

  • 1 pound flank steak or skirt steak
  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste

For the Quesadillas:

  • 4 large flour tortillas
  • 2 cups shredded Monterey Jack or cheddar cheese (or a blend)
  • 1/2 cup diced bell peppers (optional)
  • 1/2 cup diced onions (optional)
  • 2 tablespoons chopped fresh cilantro (optional)
  • Sour cream, salsa, or guacamole for serving (optional)

Instructions:

  1. Prepare the Steak:
    • In a small bowl, combine the chili powder, cumin, paprika, garlic powder, salt, and pepper to create a spice rub.
    • Rub the spice mixture evenly over the steak, coating both sides.
  2. Cook the Steak:
    • Heat a grill pan, skillet, or outdoor grill over high heat.
    • Drizzle the olive oil over the steak and place it on the hot grill or pan.
    • Cook the steak for 3-4 minutes per side for medium-rare or longer for your preferred level of doneness.
    • Remove the steak from the heat and let it rest for a few minutes before slicing it thinly against the grain.
  3. Assemble the Quesadillas:
    • Lay out one tortilla on a clean surface.
    • Sprinkle about 1/2 cup of shredded cheese evenly over half of the tortilla.
    • Add a portion of the sliced steak on top of the cheese.
    • If desired, add diced bell peppers, diced onions, and chopped cilantro on top of the steak.
    • Sprinkle another 1/2 cup of shredded cheese on top to help bind the quesadilla.
  4. Fold and Cook:
    • Fold the other half of the tortilla over the filling to create a half-moon shape.
    • Press down gently to help seal the quesadilla.
  5. Heat a large skillet or griddle over medium heat.
    • Place the assembled quesadilla in the skillet and cook for 2-3 minutes on each side, or until the tortilla is crispy and the cheese is melted and gooey.
  6. Repeat:
    • Repeat the assembly and cooking process for the remaining tortillas and filling.
  7. Serve:
    • Slice the cooked quesadillas into wedges and serve hot.
    • You can serve them with sour cream, salsa, guacamole, or your favorite dipping sauce.
