Fried Potatoes and Onions Peppers with Smoked Sausage

Fried potatoes and onions with peppers and smoked sausage is a hearty and flavorful dish that’s easy to prepare. Here’s a basic recipe to get you started:

Ingredients:

  • 4 cups of potatoes, peeled and diced into small cubes
  • 1 medium onion, thinly sliced
  • 1 bell pepper (any color), thinly sliced
  • 1 or 2 smoked sausages, sliced into rounds or half-moons
  • 2-3 tablespoons of vegetable oil or bacon grease
  • Salt and pepper, to taste
  • Paprika and other seasonings (optional)
  • Chopped fresh parsley or green onions for garnish (optional)

Instructions:

  1. Heat a large skillet or frying pan over medium-high heat. Add the vegetable oil or bacon grease and allow it to heat up.
  2. Add the diced potatoes to the hot skillet in a single layer. Season them with salt, pepper, and any other desired seasonings, such as paprika or garlic powder. Stir to coat the potatoes evenly in the oil and seasonings.
  3. Cook the potatoes, stirring occasionally, for about 10-15 minutes or until they start to become golden brown and crispy on the outside. The cooking time may vary depending on the size of your potato cubes and the heat level.
  4. Once the potatoes are partially cooked and have some color, add the sliced onions and bell peppers to the skillet. Stir to combine with the potatoes.
  5. Continue cooking for another 5-7 minutes, or until the onions and peppers become soft and slightly caramelized.
  6. While the vegetables are cooking, in a separate pan, cook the sliced smoked sausage rounds until they are browned and heated through. This step can also be done in the same skillet if there’s enough space, but cooking them separately helps them brown more evenly.
  7. Once the vegetables are tender and the potatoes are fully cooked and crispy, add the cooked smoked sausage to the skillet. Stir everything together and cook for an additional 2-3 minutes to allow the flavors to meld.
  8. Taste and adjust the seasoning with salt and pepper if necessary.
  9. Serve the fried potatoes, onions, peppers, and smoked sausage hot, garnished with chopped fresh parsley or green onions if desired.

This dish makes for a satisfying and filling meal on its own, or you can serve it with a side of crusty bread or a simple salad for a complete dinner. It’s a versatile recipe that you can customize with your favorite seasonings and ingredients. Enjoy!
