Cheese and Bacon Bread Rolls – Super Soft

  1. Activate the Yeast:
    • In a small bowl, combine the warm water, warm milk, and sugar. Sprinkle the yeast over the mixture, stir gently, and let it sit for about 5-10 minutes until it becomes frothy.
  2. Make the Dough:
    • In a large mixing bowl, combine the activated yeast mixture with 2 cups of flour. Mix well.
    • Add the melted butter and salt, and gradually add the remaining 2 cups of flour. Knead the dough until it’s smooth and elastic, either by hand or using a stand mixer with a dough hook attachment.
  3. First Rise:
    • Place the dough in a greased bowl, cover it with a clean kitchen towel, and let it rise in a warm, draft-free place for about 1-1.5 hours, or until it has doubled in size.
  4. Prepare the Filling:
    • While the dough is rising, prepare the filling. Combine the shredded cheddar cheese, bacon bits, and chopped green onions if using.
  5. Shape the Rolls:
    • Punch down the risen dough and divide it into 12 equal portions.
    • Flatten each portion into a circle, and add a generous spoonful of the cheese and bacon filling in the center.
    • Gather the edges of the dough around the filling and pinch them together to seal, creating a ball.
  6. Second Rise:
    • Place the filled rolls on a baking sheet lined with parchment paper. Cover them with a kitchen towel and let them rise for another 30 minutes.
  7. Preheat the Oven:
    • Preheat your oven to 375°F (190°C).
  8. Bake:
    • Brush the rolls with melted butter and bake in the preheated oven for 20-25 minutes or until they are golden brown and the cheese is bubbly.
  9. Serve:
