Instructions:
- Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
- In a medium saucepan, bring the butter, water, and vanilla extract to a boil over medium heat.
- Once boiling, add the flour to the saucepan and stir constantly until the mixture forms a ball and pulls away from the sides of the pot. Remove from heat and allow to cool slightly.
- Add the eggs to the mixture, one at a time, beating well after each addition until smooth.
- Drop the dough by tablespoonfuls onto the prepared baking sheet, spacing them a few inches apart.
- Bake in the preheated oven for 25-30 minutes, or until the cream puffs are puffed and golden brown. Remove from the oven and let cool completely.
- While the cream puffs are cooling, prepare Mom’s Famous Filling. In a mixing bowl, beat the heavy cream, instant vanilla pudding mix, and milk until thickened and creamy.
- Once the cream puffs have cooled, slice them in half horizontally. Pipe or spoon Mom’s Famous Filling onto the bottom halves of the cream puffs, then place the top halves back on.
- Dust the cream puffs with powdered sugar before serving.
