Tomato-Potato-Zucchini-Summer Squash “Casserole”

This Tomato-Potato-Zucchini-Summer Squash Casserole is a delightful and elegant dish that’s surprisingly easy to make. With layers of caramelized onions, thinly sliced zucchini, potato, and tomato, this casserole is as visually appealing as it is delicious. Ingredients:

  • 1 tablespoon olive oil
  • 1 medium onion, finely diced
  • 2 cloves garlic, minced
  • 1 medium zucchini
  • 1 medium yellow squash (summer squash)
  • 1 large potato
  • 1 large tomato
  • 1 teaspoon dried thyme
  • 1 teaspoon fresh rosemary, chopped
  • Salt and pepper, to taste
  • 1 cup shredded Italian cheese

Instructions:

  1. Preheat the oven to 400°F (200°C). Heat olive oil in a skillet over medium heat. Add diced onion and sauté until softened, about 5 minutes. Add minced garlic and cook until fragrant, about 1-2 minutes. Remove from heat and set aside.
  2. While the onion and garlic are sautéing, thinly slice the zucchini, yellow squash, potato, and tomato into uniform shapes. You can use a mandolin, food processor, or slice by hand, aiming for slices of similar thickness.
  3. Spray the inside of an 8×8-inch square or round baking dish with non-stick spray. Spread the softened onion and garlic mixture evenly on the bottom of the dish.
  4. Arrange the sliced vegetables vertically in the baking dish, alternating between zucchini, yellow squash, potato, and tomato. Continue until the entire dish is filled with overlapping layers of vegetables. Sprinkle generously with salt, pepper, dried thyme, and chopped rosemary.
  1. Cover the baking dish with foil and bake for 30 minutes. Then, remove the foil and sprinkle the shredded Italian cheese evenly over the top of the casserole.
  2. Return the uncovered casserole to the oven and bake for an additional 15-20 minutes, or until the cheese is golden brown and bubbly.
  3. Once done, remove from the oven and allow the casserole to cool slightly before serving. Slice and serve warm.
