Korean Kimchi Fried Rice with Egg (Kimchi Bokkeumbap

🔸 Ingredients:
• 2 cups cooked rice (preferably day-old)
• ½ cup chopped kimchi
• 2 tbsp kimchi juice (for extra flavor)
• 1 tbsp gochujang (Korean chili paste)
• 1 tbsp soy sauce
• 1 tsp sesame oil
• 1 tbsp vegetable oil
• 1 egg (fried sunny side up)
• 1 green onion (chopped)
• 1 tsp sesame seeds
• Optional: small pieces of sausage, ham, or spam for extra flavor

🔸 Directions:
1️⃣ Heat oil in a pan and sauté chopped kimchi for 2–3 minutes.
2️⃣ Add gochujang, soy sauce, and kimchi juice. Stir well.
3️⃣ Add the rice and mix until evenly coated with the sauce.
4️⃣ Stir-fry for 5–7 minutes until the rice is hot and slightly crispy at the bottom.
5️⃣ Drizzle sesame oil and toss in the green onions.
6️⃣ Serve in a bowl and top with a perfectly fried egg 🍳
