Here’s the recipe for Mexican Tortilla Casserole:
Ingredients:
- 1 lb ground beef
- 1/2 cup diced onion
- 1 packet taco seasoning mix
- 2 cups shredded cheddar cheese
- 1 can refried beans (warmed for easier spreading)
- 1 cup prepared rice (e.g., Minute Rice)
- 1/2 can Mexican blend corn, drained
- 4-5 large flour tortillas
- 8 oz thick chunky salsa (mild or hot, your choice)
Instructions:
- Preheat your oven to 350°F (175°C). Grease a springform pan, round cake pan, or casserole dish with cooking spray.
- In a skillet, brown the ground beef and diced onion over medium heat. Drain excess fat.
- Add the taco seasoning mix to the skillet with the beef and onions, following the directions on the package.
- Lay one tortilla in the bottom of the prepared baking dish. Spread 1/3 of the refried beans over the tortilla, followed by 1/3 of the cooked seasoned ground beef mixture, and sprinkle with some shredded cheese.
- For the second layer, add another tortilla, followed by half of the prepared rice, half of the salsa, half of the drained corn, and more shredded cheese.
- Repeat the layers with another tortilla, 1/3 of the refried beans, 1/3 of the ground beef mixture, and cheese.
- For the final layer, add the last tortilla, remaining refried beans, remaining ground beef mixture, drained corn, rice, salsa, and top with shredded cheese.
- Cover the casserole with foil and bake in the preheated oven for about 40 minutes. Then, uncover and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.
- Let the casserole sit for 5 minutes before cutting into it. Serve topped with sour cream, diced onion, and shredded lettuce, if desired.
