Filipino Arroz Caldo (Chicken Rice Porridge

🔸 Ingredients:
• 1 cup rice (sticky or jasmine)
• 1 tbsp oil
• 1 onion (chopped)
• 3 cloves garlic (minced)
• 1 thumb-sized piece of ginger (sliced)
• 1 lb chicken pieces (preferably thighs or wings)
• 5 cups chicken broth or water
• 2 tbsp fish sauce or soy sauce
• 1 boiled egg per serving
• Salt and pepper to taste

Toppings:
• Fried garlic bits
• Chopped green onions
• Calamansi or lemon wedges

🔸 Directions:
1️⃣ Heat oil in a pot and sauté garlic, onion, and ginger until fragrant.
2️⃣ Add chicken pieces and cook until lightly browned.
3️⃣ Stir in rice and coat well with the aromatics.
4️⃣ Pour in chicken broth and fish sauce. Bring to a boil, then lower heat and simmer until the rice breaks down and becomes porridge-like (about 30–40 minutes).
5️⃣ Season with salt and pepper to taste.
6️⃣ Serve hot with a boiled egg, fried garlic, green onions, and a squeeze of calamansi or lemon juice 🍋
7️⃣ Optional: Add crispy pork or chicken skin on top for extra crunch!

💡 Tip: If it gets too thick, add a bit more broth or water while reheating to keep it creamy and smooth
