Filipino BikoSticky Rice Cake with Caramel Topping

🔸 Ingredients:
For the sticky rice:
• 2 cups glutinous rice (malagkit)
• 2 cups coconut milk
• 1 cup water
• ½ tsp salt

For the caramel topping (latik sauce):
• 1 ½ cups brown sugar
• 2 cups coconut milk

🔸 Directions:
1️⃣ Wash the glutinous rice and cook it with coconut milk, water, and salt. Stir occasionally to prevent sticking.
2️⃣ Cook until the rice absorbs most of the liquid and becomes sticky (not too dry). Set aside.
3️⃣ In another pan, combine brown sugar and coconut milk to make the caramel topping. Cook on medium heat until thick and glossy.
4️⃣ Add the cooked rice into the caramel mixture and mix well until evenly coated.
5️⃣ Transfer to a banana leaf–lined tray, flatten evenly, and pour extra caramel sauce on top.
6️⃣ Bake or cook on low heat until the topping thickens and darkens to a golden brown.
7️⃣ Let it cool slightly before slicing — enjoy that chewy, sweet perfection 🍯

💡 Tip: For extra flavor, sprinkle toasted coconut flakes on top before serving!
