Ingredients
4 large russet potatoes, peeled and cubed (about 2 lbs – or yukon golds work too!)
2 cups sharp cheddar cheese, grated (honestly, any melty cheese works)
1/3 cup milk, warm
2 tbsp butter (plus extra for frying – trust me on this)
2 eggs, beaten
1 cup all-purpose flour
1 cup panko breadcrumbs
Salt and pepper to taste (be generous!)
