For the shells:
• 2 cups all-purpose flour

• 1 tsp cinnamon (optional)

• 1 egg yolk
• ½ cup white wine or water (as needed)

For the filling:
• 1 cup ricotta cheese (drained)
• ½ cup mascarpone (optional for creaminess)
• ½ cup powdered sugar
• 1 tsp vanilla extract
• ½ cup melted chocolate or Nutella

1️⃣ Mix flour, sugar, cinnamon, and butter until crumbly. Add egg yolk and wine; knead into a smooth dough.
2️⃣ Roll the dough thinly and cut into circles. Wrap each around a metal cannoli tube and seal the edges with a bit of egg white.
3️⃣ Fry in hot oil until golden and crispy. Let cool before removing the tubes.
4️⃣ For the filling, mix ricotta, mascarpone, powdered sugar, and vanilla until creamy.
5️⃣ Pipe the cream into both ends of each shell. Dip one side in melted chocolate.
6️⃣ Garnish with nuts, drizzle more chocolate on top, and dust with powdered sugar.
