In a small bowl, whisk together the halal soy sauce, honey, cornstarch, chicken broth, and sesame oil. Set aside. This is your delicious stir-fry sauce!
Heat the neutral cooking oil in a large skillet or wok over medium-high heat. Add the chicken pieces and season lightly with salt and pepper. Cook, stirring occasionally, for 5-7 minutes, or until the chicken is golden brown and cooked through. Remove the chicken from the skillet and set aside.
Add the broccoli florets to the same skillet. If the pan seems dry, add another tiny drizzle of oil. Stir-fry for 3-5 minutes until the broccoli is bright green and slightly tender-crisp.
Push the broccoli to one side of the skillet. Add the minced garlic and grated ginger to the empty space and cook for about 30 seconds until fragrant, being careful not to burn it.
Return the cooked chicken to the skillet with the broccoli, garlic, and ginger. Give your prepared sauce a quick whisk again (as cornstarch can settle) and pour it over the chicken and broccoli.
Stir everything well to coat. Bring the sauce to a gentle simmer, stirring constantly, for 1-2 minutes until the sauce thickens and coats the chicken and broccoli beautifully.
Taste and adjust seasoning if needed. Serve immediately and enjoy your homemade masterpiece!
