1 ½ lbs boneless, skinless chicken breasts or thighs, cut into bite-sized pieces
2 tbsp olive oil
3 tbsp butter, divided
4 cloves garlic, minced
1 tsp Italian seasoning
Salt and pepper, to taste
Fresh parsley, chopped (for garnish)
For the Creamy Parmesan Pasta:
8 oz pasta (fettuccine, penne, or your favorite)
1 tbsp butter
3 cloves garlic, minced
1 cup heavy cream
½ cup chicken broth
¾ cup freshly grated Parmesan cheese
Salt and pepper, to taste
Instructions
Cook the Pasta: Bring a pot of salted water to a boil and cook pasta according to package directions. Drain and set aside.
Sear the Chicken Bites: In a large skillet, heat olive oil and 2 tablespoons of butter over medium-high heat. Add the chicken pieces, season with salt, pepper, and Italian seasoning, and cook until golden brown and cooked through (about 6–8 minutes). Remove the chicken from the pan and set aside.
Make the Garlic Butter Sauce: In the same skillet, add the remaining tablespoon of butter and minced garlic. Sauté for about 30 seconds until fragrant, scraping up any browned bits from the pan.
Create the Creamy Pasta Sauce: Pour in the heavy cream and chicken broth. Bring to a gentle simmer, then stir in the Parmesan cheese until smooth and creamy. Season with salt and pepper to taste.
Combine Everything: Add the cooked pasta and chicken bites back into the skillet. Toss until everything is coated in that luscious garlic butter Parmesan sauce.
Serve: Garnish with chopped parsley and an extra sprinkle of Parmesan. Serve warm and watch it disappear
