Ingredients:
1 Onion, small and diced
1 pound Ground Beef
½ tsp Salt
½ tsp Black pepper
1 packet Taco Seasoning
1 tsp Garlic Powder
1 can, 15 ounce Sweet Corn, drained
1 ½ cups Beef Broth
8 ounces Tomato Sauce
½ cup Salsa
1 cup white Rice
1 cup Mexican 3 Cheese Blend, shredded
How to make One-Pot Mexican Rice Casserole:
Step 1. Place a skillet on the stove and heat over medium high heat.
Step 2. Add in the ground beef and season with Salt and Pepper
Step 3. Sprinkle with Garlic Powder, Taco Seasoning, stir until well combined
Step 4. When the meat is done cooking, add in the tomato sauce, beef broth, salsa and white rice.
Step 5. Add in the corn and stir to combine
Step 6. Place a cover on the pan and bring to a boil
Step 7. Lower the heat and simmer 18 to 20 minutes or until the Rice is tender
Step 8. Sprinkle the cheese on top and replace the cover and allow the cheese to melt for 2 to 3 minutes
