Overnight Banana French Toast Casserole

This Overnight Banana French Toast Casserole is the ultimate make-ahead breakfast! Sweet bananas, warm spices, and a soft, custardy center with a golden top—perfect for holiday mornings, brunch gatherings, or lazy weekends.


Ingredients:

  • 1 loaf French bread (day-old or slightly stale), cubed
  • 4 ripe bananas, sliced
  • 8 large eggs
  • 2 1/2 cups whole milk
  • 1/2 cup heavy cream
  • 1/2 cup brown sugar
  • 1/4 cup granulated sugar
  • 2 tsp vanilla extract
  • 1 tsp cinnamon
  • 1/4 tsp nutmeg
  • Pinch of salt
  • 2 tbsp unsalted butter, for greasing
  • Optional toppings: chopped pecans, maple syrup, powdered sugar

Directions:

1. Prep the Dish:

  • Grease a 9×13-inch baking dish with butter.
  • Layer half of the bread cubes in the dish, top with half the banana slices. Repeat with remaining bread and bananas.

2. Make the Custard Mixture:

  • In a large bowl, whisk together eggs, milk, cream, sugars, vanilla, cinnamon, nutmeg, and salt until smooth.

3. Assemble & Soak:

  • Pour the custard evenly over the bread and bananas, gently pressing the bread down to soak.
  • Cover tightly and refrigerate overnight (or at least 6 hours).

4. Bake:

  • Preheat oven to 350°F (175°C). Remove the dish from the fridge and let sit at room temp while the oven preheats.
  • Bake uncovered for 45–50 minutes, or until golden brown and set in the center.

5. Serve:

  • Let cool slightly, then serve warm with maple syrup, chopped pecans, or a dusting of powdered sugar.
