Egg Banana Pancakes

Fluffy, sweet, and made with only eggs and bananas — these pancakes are a wholesome, quick-fix breakfast that tastes like banana bread in pancake form.

Ingredients

  • 1 ripe banana
  • 2 large eggs
  • 1/4 tsp cinnamon (optional)
  • 1/2 tsp vanilla extract (optional)
  • Butter or oil for cooking

Directions

  1. Mash the Banana:
    In a medium bowl, mash the banana well until mostly smooth (a few small lumps are okay).
  2. Mix in the Eggs:
    Crack in the eggs and whisk together with the mashed banana until fully combined. Stir in cinnamon and vanilla if using.
  3. Heat the Pan:
    Heat a nonstick skillet or griddle over medium-low heat and lightly grease with butter or oil.
  4. Cook the Pancakes:
    Pour small rounds (about 2–3 tablespoons) of batter onto the skillet. Cook for 1–2 minutes per side, until golden and set. Be gentle when flipping — they’re delicate!
  5. Serve:
    Enjoy warm, topped with fresh fruit, nut butter, maple syrup, or yogurt.
