Ingredients
For the Crust:
- 1 1/2 cups graham cracker crumbs
- 1/4 cup sugar
- 6 tbsp unsalted butter, melted
For the Cheesecake Filling:
- 3 (8 oz) blocks cream cheese, softened
- 1 cup heavy cream
- 1/2 cup white chocolate chips (melted)
- 1/2 cup pistachio paste (or finely ground pistachios)
- 1 cup granulated sugar
- 1 tsp vanilla extract
- 3 large eggs
For the Topping:
- 1/4 cup crushed pistachios
- White chocolate shavings (optional)
Directions
1. Make the Crust:
- Preheat oven to 325°F (160°C).
- In a bowl, combine graham cracker crumbs, sugar, and melted butter. Mix well.
- Press mixture into the bottom of a 9-inch springform pan to form an even layer.
- Bake for 8–10 minutes, then remove from the oven and set aside to cool.
2. Prepare the Cheesecake Filling:
- In a large bowl, beat softened cream cheese until smooth.
- Add sugar and vanilla extract and mix until combined.
- Mix in the melted white chocolate and pistachio paste (or ground pistachios) until smooth.
- Add eggs one at a time, beating on low speed after each addition.
- Stir in heavy cream until fully incorporated.
3. Bake the Cheesecake:
- Pour the cheesecake batter into the cooled crust.
- Tap the pan gently to remove any air bubbles.
- Bake for 50–60 minutes, until the center is set but still slightly jiggly.
- Turn off the oven and leave the cheesecake in for another hour with the door slightly ajar.
- After an hour, let it cool to room temperature, then refrigerate for at least 4 hours (overnight is best).
4. Garnish & Serve:
- Before serving, sprinkle crushed pistachios on top and optionally add white chocolate shavings for an extra touch of luxury.
