Heavenly Pistachio White Chocolate Cheesecake

A velvety cheesecake with a hint of pistachio and white chocolate, set on a buttery crust and topped with crushed pistachios. Every bite is a divine experience.

Ingredients

For the Crust:

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup sugar
  • 6 tbsp unsalted butter, melted

For the Cheesecake Filling:

  • 3 (8 oz) blocks cream cheese, softened
  • 1 cup heavy cream
  • 1/2 cup white chocolate chips (melted)
  • 1/2 cup pistachio paste (or finely ground pistachios)
  • 1 cup granulated sugar
  • 1 tsp vanilla extract
  • 3 large eggs

For the Topping:

  • 1/4 cup crushed pistachios
  • White chocolate shavings (optional)

Directions

1. Make the Crust:

  • Preheat oven to 325°F (160°C).
  • In a bowl, combine graham cracker crumbs, sugar, and melted butter. Mix well.
  • Press mixture into the bottom of a 9-inch springform pan to form an even layer.
  • Bake for 8–10 minutes, then remove from the oven and set aside to cool.

2. Prepare the Cheesecake Filling:

  • In a large bowl, beat softened cream cheese until smooth.
  • Add sugar and vanilla extract and mix until combined.
  • Mix in the melted white chocolate and pistachio paste (or ground pistachios) until smooth.
  • Add eggs one at a time, beating on low speed after each addition.
  • Stir in heavy cream until fully incorporated.

3. Bake the Cheesecake:

  • Pour the cheesecake batter into the cooled crust.
  • Tap the pan gently to remove any air bubbles.
  • Bake for 50–60 minutes, until the center is set but still slightly jiggly.
  • Turn off the oven and leave the cheesecake in for another hour with the door slightly ajar.
  • After an hour, let it cool to room temperature, then refrigerate for at least 4 hours (overnight is best).

4. Garnish & Serve:

  • Before serving, sprinkle crushed pistachios on top and optionally add white chocolate shavings for an extra touch of luxury.
