STEAK AND SHRIMP SCAMPI

Steak and shrimp scampi is a surf-and-turf dish that combines the rich flavors of steak with succulent shrimp in a garlic and butter sauce. It’s a delightful and indulgent dish perfect for special occasions or when you want to treat yourself to a restaurant-quality meal at home. Here’s a recipe for steak and shrimp scampi:

Ingredients:

For the Steak:

  • 2 boneless ribeye steaks (or your preferred steak cut)
  • Salt and black pepper to taste
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon fresh rosemary, minced (optional)

For the Shrimp Scampi:

  • 1 pound large shrimp, peeled and deveined
  • 4 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 1/4 cup white wine (optional)
  • Juice of 1 lemon
  • Zest of 1 lemon
  • 1/4 cup fresh parsley, chopped
  • Salt and black pepper to taste
  • Crushed red pepper flakes (optional, for some heat)
  • Cooked pasta or crusty bread (optional, for serving)

Instructions:

1. Prepare the Steak:

  • Season the steaks generously with salt and black pepper on both sides.
  • In a skillet or cast-iron pan, heat 2 tablespoons of olive oil over medium-high heat.
  • Add the minced garlic and fresh rosemary (if using) to the pan and sauté for about 30 seconds until fragrant.
  • Add the steaks to the hot pan and sear for about 3-4 minutes per side for medium-rare, or longer for your preferred doneness.
  • Once the steaks are done, remove them from the pan and let them rest on a plate while you prepare the shrimp scampi.

2. Prepare the Shrimp Scampi:

  • In the same pan used for the steak, add the unsalted butter over medium heat.
  • Once the butter has melted, add the minced garlic and sauté for about 30 seconds until fragrant.
  • Add the white wine (if using) and allow it to simmer for a minute to reduce slightly.
  • Stir in the lemon juice, lemon zest, chopped parsley, salt, black pepper, and crushed red pepper flakes (if using).
  • Add the peeled and deveined shrimp to the pan and cook for 2-3 minutes on each side until they turn pink and opaque. Be careful not to overcook the shrimp, as they can become tough.

3. Serve:

  • Place the cooked steaks on serving plates.
  • Spoon the shrimp scampi mixture over the steaks.
  • Optionally, serve the dish with cooked pasta or crusty bread to soak up the delicious sauce.
