Grilled lamb chops

Ingredients:

  • Lamb chops (about 1 to 1.5 inches thick)
  • Olive oil
  • Salt and freshly ground black pepper

Instructions:

  1. Preheat your grill to medium-high heat. You want the grill to be hot for a good sear on the lamb chops.
  2. While the grill is heating up, prepare the lamb chops. Pat them dry with paper towels, which will help them develop a nice sear on the grill.
  3. Brush both sides of the lamb chops with olive oil to prevent sticking and enhance flavor. You can also mix in any optional seasonings you like at this point.
  4. Season the lamb chops generously with salt and freshly ground black pepper. If you’ve added other seasonings, adjust the salt accordingly to your taste.
  5. Place the lamb chops on the hot grill grates. Grill them for about 3-4 minutes on each side for medium-rare, or adjust the cooking time to your desired level of doneness. You can also use a meat thermometer to check the internal temperature. For medium-rare, it should be around 145°F (63°C), and for medium, it’s approximately 160°F (71°C).
  6. Avoid pressing down on the lamb chops with a spatula while grilling, as this can release juices and make the meat less juicy.
  7. If you like grill marks, rotate the lamb chops 90 degrees halfway through cooking on each side to achieve a crosshatch pattern.
  8. Once the lamb chops reach your desired level of doneness, remove them from the grill and let them rest for a few minutes. This allows the juices to redistribute, resulting in more tender and flavorful chops.
  9. Serve the grilled lamb chops hot, garnished with fresh herbs or a squeeze of lemon juice if desired.
