Ingredients:

  • 1 cup fresh or frozen cranberries
  • 2 cups all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup (1 stick) unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 4 ounces cream cheese, softened
  • 1 teaspoon vanilla extract
  • 1/2 cup milk

For the cream cheese frosting (optional):

  • 4 ounces cream cheese, softened
  • 1/4 cup unsalted butter, softened
  • 1 cup powdered sugar
  • 1/2 teaspoon vanilla extract

Instructions:

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan.
  2. If you’re using fresh cranberries, chop them roughly. If using frozen cranberries, make sure they are thawed and well-drained.
  3. In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
  4. In a large mixing bowl, cream together the softened butter and sugar until light and fluffy.
  5. Beat in the eggs one at a time, ensuring each egg is well incorporated before adding the next.
  6. Add the softened cream cheese and vanilla extract to the mixture and blend until smooth.
  7. Gradually add the dry ingredients to the wet mixture, alternating with the milk, beginning and ending with the dry ingredients. Mix until just combined.
  8. Gently fold in the cranberries, being careful not to overmix the batter.
  9. Pour the batter into the prepared loaf pan and spread it out evenly.
  10. Bake in the preheated oven for about 55-60 minutes, or until a toothpick inserted into the center comes out clean.
  11. Allow the loaf to cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.
  12. If desired, prepare the cream cheese frosting by beating the softened cream cheese and butter together until smooth. Gradually add the powdered sugar and vanilla extract, and beat until creamy. Spread the frosting over the cooled loaf.
  13. Slice and serve your Cream Cheese Cranberry Loaf, and enjoy!

This loaf is a delightful combination of sweet, tangy, and creamy flavors, making it a perfect treat for any occasion.
