Cranberry Orange Bread with Simple Glaze

Instructions:

  1. Preheat the oven to 350°F. Grease and flour one 9 x 5-inch loaf pan, tapping out excess flour.
  2. In a medium bowl, sift together 1 1/2 cups flour, baking powder, and salt; set aside.
  3. In a large bowl, whisk together yogurt, sugar, eggs, orange zest, vanilla, and oil. Slowly whisk in the dry ingredients until well combined.
  4. In a separate bowl, mix cranberries with remaining tablespoon of flour, then gently fold them into the batter.
  5. Pour the batter into the prepared pan and bake for 50 to 55 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs attached.
  6. Allow the loaf to cool in the pan for 10 minutes before transferring it to a wire rack set over a baking sheet.
  7. While the loaf is cooling, make the orange syrup by heating orange juice and sugar in a small saucepan over medium heat. Cook until sugar is dissolved, then continue to cook for 3 more minutes. Remove from heat and set aside.
  1. Use a toothpick to poke holes in the top and sides of the warm loaf. Brush the loaf with the orange syrup, allowing it to soak in. Repeat brushing until all syrup is used. Let the loaf cool completely.
  2. To make the orange glaze, whisk together confectioners’ sugar and 2-3 tablespoons orange juice in a small bowl until smooth and pourable. Add more orange juice if needed.
  3. Pour the glaze over the cooled loaf, allowing it to drip down the sides. Let the glaze harden for about 15 minutes before serving.
