Perfect Blueberry Muffins Recipe

Ingredients:

  • 3 cups blueberries
  • 1 1/4 cups granulated sugar
  • 1 1/4 cups light brown sugar
  • 4 large eggs
  • 1 cup vegetable oil
  • 1 teaspoon pure vanilla extract
  • 2 cups sour cream
  • 4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • Demerara sugar to sprinkle on top (optional)

Directions:

  1. Preheat the oven to 400°F (200°C). Grease 24 muffin tin/cups (regular size) or line muffin tin(s) with paper liners.
  2. In a large bowl, beat the eggs. Gradually add the granulated sugar and light brown sugar, beating until smooth.
  3. Slowly add the vegetable oil and vanilla extract to the egg mixture, mixing until well blended.
  4. In a separate large bowl, mix the flour, salt, and baking soda.
  5. Alternately add the flour mixture and sour cream to the egg mixture, stirring until well blended. Be careful not to overmix.
  6. Gently fold the blueberries into the batter. Again, avoid overmixing.
  7. Fill each muffin cup 3/4 to almost full. Optionally, sprinkle the tops with Demerara sugar.
  8. Place the muffin tin(s) on the middle rack of the preheated oven and bake for 20 minutes or until a toothpick inserted into the center of a muffin comes out clean.
  9. Remove the muffins from the oven and allow them to cool in the tin(s) for a few minutes before transferring them to a wire cooling rack.
  10. Serve the muffins warm or at room temperature. Enjoy these bakery-style blueberry muffins bursting with flavor!
