Instructions:
- Preheat the oven to 350 degrees F and prepare a springform pan.
Cheesecake Mixture:
- Whisk sugar and flour in a large bowl until well combined.
- Using an electric mixer, blend cream cheese and sugar mixture until smooth. Add eggs, vanilla extract, and sour cream, and blend for 2 more minutes. Set aside.
Carrot Cake:
- In a large mixing bowl, whisk together white flour, baking soda, baking powder, cinnamon powder, and a pinch of salt for 1 minute.
- In another bowl, add oil, applesauce, brown sugar, eggs, and vanilla extract. Blend with a hand mixer, then slowly add dry ingredients and carrots. Mix well.
- In a greased springform pan, pour layers starting with carrot cake mixture, then cream cheese mixture, and repeat. Finish with a layer of carrot cake mixture. Bake for 1 hour.
Topping:
- Whip cream cheese and butter using an electric hand mixer until smooth. Add the remaining topping ingredients and mix for about 5 minutes.
- Spread the mixture over the cheesecake and chill in the fridge for 1 hour.
- Optionally, sprinkle chopped pecans over the top.
