THIS IS INCREDIBLE YUMMY SUMMER SALAD & CAN STAY IN FRIDGE UP TO 2 MONTHS

This refreshing cucumber salad is not only delicious but can also be stored in the fridge for up to two months, making it a convenient and flavorful addition to your meals. With its crisp cucumbers, colorful peppers, and tangy dressing, this salad is sure to be a hit at any gathering or as a quick side dish for weeknight dinners. Here’s how to make it:

Ingredients:

  • 1 cucumber
  • 1 bell pepper (green, yellow, or red)
  • 1 small onion
  • 1 cup vinegar
  • 1 tablespoon salt
  • 1/4 cup sugar
  • 1 teaspoon celery seeds
  • 1 teaspoon mustard seeds

Instructions:

  1. Prepare the Vinegar Mixture: In a saucepan, combine the vinegar, salt, sugar, celery seeds, and mustard seeds. Heat the mixture over medium heat until the sugar and salt dissolve completely. Remove the pan from the heat and allow the mixture to cool.
  2. Slice the Vegetables: While the vinegar mixture is cooling, thinly slice the cucumber, bell pepper, and onion. You can use a mandoline or a sharp knife for this step.
  3. Layer the Vegetables: Place the sliced vegetables in a clean quart jar, alternating layers for a visually appealing presentation.
  4. Pour the Vinegar Mixture: Once the vinegar mixture has cooled, pour it over the vegetables in the jar, ensuring that the vegetables are fully submerged. Leave about 2/3 cm of space at the top of the jar.
  1. Close and Refrigerate: Seal the jar with an airtight lid and place it in the refrigerator. The salad can be enjoyed immediately, but for best results, let it marinate in the fridge for at least a few hours or overnight before serving.
  2. Serve and Enjoy: When ready to serve, simply remove the jar from the fridge, give it a gentle shake to redistribute the flavors, and transfer the salad to a serving bowl. Enjoy this delicious and refreshing summer salad as a side dish or snack.

Note: Feel free to customize this salad by adding additional vegetables or herbs, such as cherry tomatoes, sliced radishes, or fresh dill. The longer the salad sits in the fridge, the more the flavors will meld together, so don’t hesitate to make a big batch to enjoy throughout the summer months.
