Ingredients:

  • 12 oz elbow macaroni
  • 4 tablespoons unsalted butter
  • 4 tablespoons all-purpose flour
  • 3 cups milk (whole or 2%)
  • 1 cup heavy cream
  • 1 teaspoon garlic powder
  • 1 teaspoon Dijon mustard
  • ½ teaspoon smoked paprika (optional)
  • Salt and pepper to taste
  • 3 cups shredded sharp cheddar cheese
  • 1 cup shredded mozzarella cheese
  • ½ cup grated Parmesan cheese

Directions:

  1. Cook the Pasta:
    • Bring a large pot of salted water to a boil.
    • Add macaroni and cook according to package instructions until al dente. Drain and set aside.
  2. Make the Roux:
    • In a large saucepan, melt butter over medium heat.

  5. Combine Pasta and Sauce:
    • Add the cooked macaroni to the cheese sauce, stirring until fully coated.

    • For a baked version, transfer the mac and cheese to a greased baking dish.
    • Top with additional cheese or breadcrumbs and bake at 375°F (190°C) for 15-20 minutes until golden and bubbly.
