Easy Sheet Pan Salmon and Veggies

Ingredients:

  • 4 salmon fillets (about 6 oz each)
  • 1 pound asparagus, trimmed
  • 1 cup cherry tomatoes, halved
  • 1 medium zucchini, sliced
  • 3 tablespoons olive oil
  • 2 teaspoons garlic powder
  • 1 teaspoon paprika
  • 1 teaspoon dried oregano
  • 1/2 teaspoon chili flakes (optional)
  • Salt and black pepper, to taste
  • 1 lemon, sliced into wedges

Directions:

  1. Preheat the Oven:
    • Preheat your oven to 400°F (200°C). Line a large sheet pan with parchment paper or lightly grease with cooking spray.
  2. Prepare the Vegetables:
    • In a bowl, toss the asparagus, cherry tomatoes, and zucchini with 2 tablespoons olive oil, 1 teaspoon garlic powder, paprika, oregano, salt, and pepper. Spread the vegetables evenly on the sheet pan.
  3. Season the Salmon:
    • Pat the salmon fillets dry and place them on the sheet pan with the vegetables. Brush the fillets with the remaining olive oil, then season with the rest of the garlic powder, paprika, chili flakes (if using), salt, and pepper.
