Marry Me Chicken Tortellini

Ingredients:

  • 1 lb boneless, skinless chicken breasts, diced
  • 1 tablespoon olive oil
  • 3 cloves garlic, minced
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • 1/4 teaspoon red pepper flakes (optional)
  • 9 oz refrigerated cheese tortellini
  • 1/2 cup sun-dried tomatoes, chopped
  • Salt and pepper to taste
  • Fresh basil leaves for garnish

Directions:

  1. Heat olive oil in a large skillet over medium-high heat. Add the diced chicken and season with salt and pepper. Cook until golden and fully cooked, about 5-7 minutes. Remove chicken from the skillet and set aside.
  2. In the same skillet, reduce heat to medium and sauté the minced garlic until fragrant, about 1 minute.
  3. Stir in the chicken broth and heavy cream, scraping any browned bits from the bottom of the pan.
  4. Add Parmesan cheese, Italian seasoning, and red pepper flakes (if using). Stir until the cheese melts and the sauce thickens slightly.
  5. Add the tortellini and sun-dried tomatoes to the skillet. Simmer for 5-7 minutes, stirring occasionally, until the tortellini are tender and cooked through.
  6. Return the cooked chicken to the skillet and toss to coat in the creamy sauce. Cook for an additional 2 minutes to warm through.
  7. Serve immediately, garnished with fresh basil leaves.
