Old South Coca-Cola Pork Loin

Ingredients:

  • 3-4 lb pork loin roast
  • 1 cup Coca-Cola (not diet)
  • 1/2 cup brown sugar
  • 1/4 cup soy sauce
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon smoked paprika
  • Salt and pepper to taste
  • 1 tablespoon olive oil

Directions:

  1. Preheat your oven to 325°F (165°C).
  2. Season the pork loin with salt, pepper, garlic powder, onion powder, and smoked paprika.
  3. Heat olive oil in a large skillet over medium-high heat. Sear the pork loin on all sides until browned, about 3-4 minutes per side.
  4. In a small bowl, whisk together Coca-Cola, brown sugar, soy sauce, and Worcestershire sauce.
  5. Place the seared pork loin in a roasting pan and pour the Coca-Cola mixture over the top.
  6. Cover the pan with foil and roast in the preheated oven for 1.5 to 2 hours, basting the pork with the pan juices every 30 minutes.
  7. Remove the foil for the last 20 minutes of cooking to allow the top to caramelize. Ensure the internal temperature of the pork reaches 145°F (63°C).
  8. Let the pork rest for 10 minutes before slicing. Drizzle with the pan juices before serving.
