Taco Tortilla Roll Ups

These taco tortilla roll ups are a quick and easy appetizer or snack that’s bursting with Mexican flavors. With creamy filling wrapped in soft tortillas, they’re perfect for any occasion!

Ingredients

  • 1 (8 oz) package cream cheese, softened
  • 1 cup sour cream
  • 1 packet taco seasoning mix
  • 1 cup shredded cheddar cheese
  • 1/2 cup diced green onions
  • 1/2 cup diced bell peppers (any color)
  • 1/2 cup chopped black olives (optional)
  • 5 large flour tortillas

Directions

1. Prepare the Filling:

  1. In a large bowl, combine the softened cream cheese, sour cream, and taco seasoning mix. Beat until smooth and well blended.
  2. Stir in shredded cheddar cheese, green onions, bell peppers, and black olives (if using). Mix until evenly combined.

2. Assemble the Roll Ups:

  1. Lay one tortilla flat on a clean surface. Spread a generous layer of the taco filling evenly across the entire tortilla, leaving a small border around the edges.
  2. Roll the tortilla tightly, starting from one end, to form a log.
  3. Repeat with the remaining tortillas and filling.

3. Chill and Slice:

  1. Wrap each tortilla log in plastic wrap and refrigerate for at least 1-2 hours to firm up.
  2. Once chilled, remove the plastic wrap and slice the tortilla rolls into 1-inch pieces.

4. Serve and Enjoy:

  1. Arrange the roll ups on a serving platter.
  2. Garnish with extra green onions or a sprinkle of shredded cheese if desired. Serve with salsa, guacamole, or sour cream for dipping.
