Ingredients

For the Brownie Base:

  • 1/2 cup (1 stick) unsalted butter, melted
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/3 cup unsweetened cocoa powder
  • 1/2 cup all-purpose flour
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon salt

For the Topping:

  • 1 pint fresh strawberries, hulled and halved
  • 1 cup semi-sweet chocolate chips
  • 2 tablespoons coconut oil or butter

Directions

1. Prepare the Brownie Base:

  1. Preheat your oven to 350°F (175°C). Grease an 8×8-inch baking pan or line it with parchment paper for easy removal.
  2. In a medium mixing bowl, combine melted butter and sugar. Whisk until smooth.
  3. Add eggs and vanilla extract. Continue whisking until the mixture is light and fluffy.
  4. Sift in cocoa powder, flour, baking powder, and salt. Stir until just combined; do not overmix.
  5. Pour the batter into the prepared pan, spreading it evenly.
  6. Bake for 20-25 minutes or until a toothpick inserted in the center comes out with a few moist crumbs.
  7. Allow the brownies to cool completely in the pan.

2. Add the Strawberry Layer:

  1. Once the brownies have cooled, arrange the halved strawberries over the surface, cut side down.
  2. Ensure the strawberries cover the entire brownie base evenly.

3. Make the Chocolate Coating:

  1. In a microwave-safe bowl, combine the chocolate chips and coconut oil.
  2. Microwave in 30-second intervals, stirring after each, until the chocolate is fully melted and smooth.
  3. Pour the melted chocolate over the strawberries, ensuring they are completely covered.

4. Chill and Serve:

  1. Place the pan in the refrigerator for at least 1 hour, or until the chocolate sets.
  2. Once set, slice the brownies into squares using a sharp knife.
