Chocolate Covered Strawberry Brownies

Ingredients

1. Prepare the Brownie Base:

- In a medium mixing bowl, combine melted butter and sugar. Whisk until smooth.
- Add eggs and vanilla extract. Continue whisking until the mixture is light and fluffy.
- Sift in cocoa powder, flour, baking powder, and salt. Stir until just combined; do not overmix.
- Pour the batter into the prepared pan, spreading it evenly.

2. Add the Strawberry Layer:
- Once the brownies have cooled, arrange the halved strawberries over the surface, cut side down.
- Ensure the strawberries cover the entire brownie base evenly.
3. Make the Chocolate Coating:
- In a microwave-safe bowl, combine the chocolate chips and coconut oil.
- Microwave in 30-second intervals, stirring after each, until the chocolate is fully melted and smooth.
- Pour the melted chocolate over the strawberries, ensuring they are completely covered.
4. Chill and Serve:
- Place the pan in the refrigerator for at least 1 hour, or until the chocolate sets.
- Once set, slice the brownies into squares using a sharp knife.
