Ingredients:
- 2 lbs (about 4-5) russet or Yukon gold potatoes, peeled and cubed
- 4 tablespoons butter
- ½ cup sour cream
- ½ cup milk (or more as needed)
- 1 cup shredded cheddar cheese
- 4 slices cooked bacon, crumbled
- 2 green onions, chopped
- Salt & pepper, to taste
Directions:
- Boil the Potatoes: Place cubed potatoes in a large pot of salted water. Bring to a boil and cook for 15-20 minutes, or until fork-tender. Drain well.
- Mash & Mix: Return the drained potatoes to the pot. Add butter, sour cream, and milk, then mash until smooth and creamy. Adjust the milk if needed for desired consistency.
- Add the Good Stuff: Stir in cheddar cheese, crumbled bacon, and chopped green onions. Season with salt and pepper to taste.
