Easy Loaded Mashed Potatoes

These loaded mashed potatoes are creamy, cheesy, and packed with flavor! Perfect as a side dish for any meal or even as a standalone comfort food treat.

Ingredients:

  • 2 lbs (about 4-5) russet or Yukon gold potatoes, peeled and cubed
  • 4 tablespoons butter
  • ½ cup sour cream
  • ½ cup milk (or more as needed)
  • 1 cup shredded cheddar cheese
  • 4 slices cooked bacon, crumbled
  • 2 green onions, chopped
  • Salt & pepper, to taste

Directions:

  1. Boil the Potatoes: Place cubed potatoes in a large pot of salted water. Bring to a boil and cook for 15-20 minutes, or until fork-tender. Drain well.
  2. Mash & Mix: Return the drained potatoes to the pot. Add butter, sour cream, and milk, then mash until smooth and creamy. Adjust the milk if needed for desired consistency.
  3. Add the Good Stuff: Stir in cheddar cheese, crumbled bacon, and chopped green onions. Season with salt and pepper to taste.
  4. Serve & Enjoy: Garnish with extra cheese, bacon, and green onions for a picture-perfect dish!
