Hobo Dinner Foil Packets

These classic foil packets are a campfire or oven favorite! Packed with ground beef, hearty potatoes, crisp veggies, and savory seasoning, they’re perfect for an easy weeknight dinner or outdoor cooking adventure. Everyone gets their own packet—no cleanup needed!


Ingredients:

  • 1 lb ground beef (divided into 4 patties)
  • 2 cups baby potatoes, halved or quartered
  • 2 cups carrots, sliced
  • 1 small onion, sliced
  • 1 cup green beans (optional)
  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp paprika
  • Salt and pepper to taste
  • 1 tbsp Worcestershire sauce (optional)
  • 1 cup shredded cheddar cheese (optional)
  • Aluminum foil (heavy-duty recommended)

Directions:

  1. Preheat oven or grill:
    Preheat your oven to 400°F (200°C) or get your grill going on medium heat.
  2. Prep vegetables:
    In a large bowl, toss the potatoes, carrots, onion, and green beans (if using) with olive oil, garlic powder, onion powder, paprika, salt, and pepper.
  3. Assemble foil packets:
    Tear 4 large pieces of foil. In the center of each, place a beef patty, drizzle with a little Worcestershire sauce, and top with a generous scoop of veggies.
  4. Seal packets:
    Fold the sides of the foil over the mixture and seal tightly to create a packet.
  5. Cook:
    • Oven: Place on a baking sheet and bake for 35–40 minutes, or until veggies are tender and meat is cooked through.
    • Grill: Cook over medium heat for 30–35 minutes, turning once halfway through.
  6. Optional – Add cheese:
    Carefully open packets, sprinkle with cheddar cheese, and return to the oven (uncovered) for 5 more minutes to melt.
  7. Serve:
    Serve directly in the foil or transfer to a plate. Enjoy hot!
