Taco Soup

This hearty and flavorful taco soup is a one-pot wonder—packed with ground beef, beans, corn, and classic taco spices. It’s perfect for busy weeknights or cozy weekends, and even better with your favorite toppings!


Ingredients:

  • 1 lb ground beef (or ground turkey)
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 (15 oz) can black beans, drained and rinsed
  • 1 (15 oz) can kidney beans, drained and rinsed
  • 1 (15 oz) can corn, undrained
  • 1 (15 oz) can diced tomatoes with green chilies (like Rotel)
  • 1 (8 oz) can tomato sauce
  • 2 cups beef broth or water
  • 1 packet taco seasoning (or 2 tbsp homemade)
  • 1 tsp chili powder (optional, for extra heat)
  • Salt and pepper to taste

Optional Toppings:

  • Shredded cheese
  • Sour cream
  • Avocado slices
  • Tortilla chips or strips
  • Fresh cilantro
  • Jalapeño slices

Directions:

  1. Cook the beef:
    In a large pot or Dutch oven over medium heat, cook the ground beef and onion until browned and the onion is soft. Drain any excess fat.
  2. Add garlic and seasonings:
    Stir in the garlic, taco seasoning, and chili powder. Cook for 1–2 minutes until fragrant.
  3. Add remaining ingredients:
    Pour in the beans, corn, diced tomatoes, tomato sauce, and beef broth. Stir well to combine.
  4. Simmer:
    Bring to a boil, then reduce heat and let simmer for 20–25 minutes, stirring occasionally.
  5. Taste and adjust:
    Add salt and pepper to taste.
  6. Serve:
    Ladle into bowls and top with your favorite toppings. Enjoy!
