This cozy loaf is like your favorite apple fritter in bread form! Packed with cinnamon-sugar apples and topped with a sweet glaze, it’s perfect with coffee or as a dessert.
Ingredients:
For the Bread Batter:
- 1/3 cup light brown sugar
- 1 teaspoon ground cinnamon
- 2/3 cup white sugar
- 1/2 cup butter, softened
- 2 eggs
- 1 1/2 teaspoons vanilla extract
- 1 1/2 cups all-purpose flour
- 1 3/4 teaspoons baking powder
- 1/2 cup milk
For the Apple Filling:
- 2 apples, peeled and diced
- 2 tablespoons white sugar
- 1/2 teaspoon ground cinnamon
For the Glaze:
- 1/2 cup powdered sugar
- 1–2 tablespoons milk or cream
- Optional: a drop of vanilla extract
Directions:
- Preheat oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan.
- Make apple mixture:
In a bowl, combine the diced apples, 2 tablespoons sugar, and 1/2 teaspoon cinnamon. Set aside. - Cinnamon-sugar layer:
Mix the brown sugar and 1 teaspoon cinnamon in a small bowl and set aside. - Make batter:
In a large bowl, cream together the butter and white sugar until light and fluffy. Add eggs and vanilla; mix well.
Stir in flour and baking powder, then add the milk and mix until smooth. - Assemble:
Pour half of the batter into the loaf pan. Add half of the apples and sprinkle half of the brown sugar-cinnamon mix on top.
Pour the remaining batter over that, then top with remaining apples and brown sugar mixture. Gently swirl with a knife. - Bake:
Bake for 50–60 minutes, or until a toothpick inserted in the center comes out clean. Let cool in the pan for 15 minutes, then transfer to a wire rack. - Add glaze:
Mix powdered sugar with milk (and vanilla if using) to make a smooth glaze. Drizzle over the cooled bread.
