Country Apple Fritter Bread

This cozy loaf is like your favorite apple fritter in bread form! Packed with cinnamon-sugar apples and topped with a sweet glaze, it’s perfect with coffee or as a dessert.


Ingredients:

For the Bread Batter:

  • 1/3 cup light brown sugar
  • 1 teaspoon ground cinnamon
  • 2/3 cup white sugar
  • 1/2 cup butter, softened
  • 2 eggs
  • 1 1/2 teaspoons vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 3/4 teaspoons baking powder
  • 1/2 cup milk

For the Apple Filling:

  • 2 apples, peeled and diced
  • 2 tablespoons white sugar
  • 1/2 teaspoon ground cinnamon

For the Glaze:

  • 1/2 cup powdered sugar
  • 1–2 tablespoons milk or cream
  • Optional: a drop of vanilla extract

Directions:

  1. Preheat oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan.
  2. Make apple mixture:
    In a bowl, combine the diced apples, 2 tablespoons sugar, and 1/2 teaspoon cinnamon. Set aside.
  3. Cinnamon-sugar layer:
    Mix the brown sugar and 1 teaspoon cinnamon in a small bowl and set aside.
  4. Make batter:
    In a large bowl, cream together the butter and white sugar until light and fluffy. Add eggs and vanilla; mix well.
    Stir in flour and baking powder, then add the milk and mix until smooth.
  5. Assemble:
    Pour half of the batter into the loaf pan. Add half of the apples and sprinkle half of the brown sugar-cinnamon mix on top.
    Pour the remaining batter over that, then top with remaining apples and brown sugar mixture. Gently swirl with a knife.
  6. Bake:
    Bake for 50–60 minutes, or until a toothpick inserted in the center comes out clean. Let cool in the pan for 15 minutes, then transfer to a wire rack.
  7. Add glaze:
    Mix powdered sugar with milk (and vanilla if using) to make a smooth glaze. Drizzle over the cooled bread.
