For the crust:
- 24 Golden Oreos
- 5 tbsp unsalted butter, melted
For the cheesecake filling:
- 16 oz cream cheese (softened)
- 1/2 cup granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- 1/2 cup sour cream
- 1 cup diced fresh strawberries
Optional topping:
- Extra crushed Golden Oreos
- Sliced strawberries or whipped cream (for serving)
Directions
- Prepare the crust:

Crush the Golden Oreos into fine crumbs using a food processor. Mix with melted butter until combined.
Press the mixture firmly into the bottom of the pan to form an even crust. Bake for 8 minutes. Let cool. - Make the cheesecake filling:
In a large bowl, beat softened cream cheese and sugar until smooth.
Add eggs one at a time, mixing well after each. Stir in vanilla and sour cream.
Gently fold in the diced strawberries. - Assemble and bake:
Pour the cheesecake mixture over the cooled crust and spread evenly.
Bake for 35–40 minutes, or until the center is set and just slightly jiggly.
Remove from oven and let cool to room temperature, then chill in the fridge for at least 4 hours (overnight is best). - Serve:
Lift bars from the pan using parchment paper. Slice into squares.
