Dorito Taco Salad

Ingredients

  • 1 lb ground beef
  • 1 packet taco seasoning
  • 1 head romaine lettuce (chopped)
  • 1 cup cherry tomatoes (halved)
  • 1 cup shredded cheddar cheese
  • 1 can (15 oz) black beans (rinsed and drained)
  • 1 cup corn (optional, canned or thawed from frozen)
  • 1/2 red onion (diced)
  • 2 cups Nacho Cheese Doritos (crushed)
  • 1/2 cup Catalina or ranch dressing (to taste)
  • Optional toppings: sliced jalapeños, avocado, sour cream, olives

Directions

  1. Cook the beef:
    In a large skillet over medium heat, cook the ground beef until browned. Drain excess grease. Add taco seasoning and a splash of water; simmer until well combined. Set aside to cool slightly.
  2. Assemble the salad:
    In a large bowl, combine chopped lettuce, tomatoes, cheese, beans, corn, and onion.
  3. Add beef & chips:
    Add the cooled taco meat and crushed Doritos to the salad mix. Toss everything together.
  4. Dress it up:
    Drizzle with Catalina or ranch dressing, toss again until evenly coated.
  5. Serve immediately:
    Garnish with your favorite toppings and enjoy!
