Ingredients
- 1 lb ground beef
- 1 packet taco seasoning
- 1 head romaine lettuce (chopped)
- 1 cup cherry tomatoes (halved)
- 1 cup shredded cheddar cheese
- 1 can (15 oz) black beans (rinsed and drained)
- 1 cup corn (optional, canned or thawed from frozen)
- 1/2 red onion (diced)
- 2 cups Nacho Cheese Doritos (crushed)
- 1/2 cup Catalina or ranch dressing (to taste)
- Optional toppings: sliced jalapeños, avocado, sour cream, olives
Directions
- Cook the beef:
In a large skillet over medium heat, cook the ground beef until browned. Drain excess grease. Add taco seasoning and a splash of water; simmer until well combined. Set aside to cool slightly. - Assemble the salad:
In a large bowl, combine chopped lettuce, tomatoes, cheese, beans, corn, and onion. - Add beef & chips:
Add the cooled taco meat and crushed Doritos to the salad mix. Toss everything together. - Dress it up:
Drizzle with Catalina or ranch dressing, toss again until evenly coated. - Serve immediately:
Garnish with your favorite toppings and enjoy!
